According to culinary tradition, the head chef decides when a cook in training is ready to learn a new technique or expand their creativity. David recalls, after seven months working with Monsieur Paul, “One day Bocuse called me over for breakfast and said, ‘Tomorrow I want you to start at Roger Vergé.’” This custom continues today, creating an extended family from Spain to Japan, Italy to India. A product of this tradition, the Bouley Culinary Team is comprised of highly trained individuals, stagers and students who work with dedication alongside Chef David Bouley to develop new techniques and further the art of cooking.
